Banana Peanut Butter “Nice” Cream

IMG_8910

Thank you, thank you frozen banana for creating a faux ice cream that’s heavenly.  It’s guilt-free and so easy to make!  First and foremost, your banana is the sweet in this recipe is so make sure it’s ripe to the point of being slightly spotted.  The more ripe the more sweet it will be.  The peanut butter and cocoa amounts can be adjusted to suit your tastes but be careful not to add too much almond milk or you’ll end with a smoothie.  If that happens, simply add some more frozen banana slices or pop it in the freezer until it firms up.  I like to top mine with chopped peanuts, coconut and chocolate chips.

Roasted Red Pepper & Tomato Soup

IMG_8340

My favorite thing about pureed soup is that I don’t have to worry about chopping up the garlic and veggies into little bits because it doesn’t matter in the end.  🙂  What else makes this soup awesome is the roasted flavor from the red pepper and tomato.  The ratio I’ve used here has a nice balance.  You can definitely taste the red pepper but it’s not Continue reading “Roasted Red Pepper & Tomato Soup”

Vegan Creamy Broccoli Soup

IMG_8139

Broccoli cheese soup is one of my favorite all time soups.  I have always loved broccoli, even as a child and I love soup all year round.  I’ve worked on making a healthier version without the heavy cream.  This uses cashew cream instead and Continue reading “Vegan Creamy Broccoli Soup”

Spicy Tofu and Avocado Maki Rolls

photo 3

April is National Soy Foods Month and I thought I’d share one of my favorite ways to enjoy tofu.  This recipe even calls for the pre-cooked kind, not the kind in water that you have to drain.  Super easy to slice and already seasoned.  Rolling them can be a little bit of  a challenge but I found that video was really helpful. FullSizeRender (1)

Stop what you’re doing right now and head to target.com and browse the shoe section because right now they’re buy one, get one 50% off through Saturday!  Better yet, get to the store if you can.  I recently bought a few pairs of shoes there and had to share my favorites and also a few tips for buying online.

dv Rose Sneakers

These are my favorite style I purchased this season and apparently I was late to the party barbecue they’re sold out online and I had to do the find in store.  The closest that had them was 30 minutes away.  Worth it.  If you can find them, buy them.  Another cute slip on sneaker that I spotted at the store is the Reese Slip On Sneaker.  They come in pink too but my favorite is the olive green.

I love these in all three colors but I went with black to start!  I’ll likely soon be getting the white/brown pair as well.  These were even comfortable on day one of wearing

dv Kassi Peep Toe Pump

I found these in the store and they adorable and so stylish but they didn’t have my size.  I ordered the beige ones online when I saw the BOGO sale and can’t wait to get them!

Grey all the way in these!  I love the ease of mule and I love that the block heel is in style because it’s so much easier to walk in.

Elinor d’Orsay Ghillie Lace Up Espadrille

These run pretty big, so I’d recommend a half size down.  Otherwise they’re stylish and on trend with the lace up ties and a comfortable addition to your closet!

A few other top picks that caught my eye!

Spicy, Saucey Kale Chips

One of my favorite healthy snacks, amazing kale chips!  I went through a time where I was obsessed to Brad’s Raw kale chips which turned out to be quite a pricey addiction at $8/package.  When I made these I just couldn’t believe how much they tasted like them!

Warm Me Up Tortilla Soup

Tortilla Soup 1

It’s still pretty chilly here and I’ve been craving soup and this one is one of my favorites.  The flavors really are warming, especially if you add the jalapeno!  I also love cumin so I add more of this than the chili powder but you can adjust to your tastes. TJ Maxx Find: Michael Kors Sweater

img_5479

I was super excited to check out a new TJ Maxx in my area and it was awesome!  I had to share this amazing fringe trim sweater from Michael Kors.  Originally $100 and I got it for $40!!!

Fringe is in and a must have for your wardrobe.  And I love that this one is long enough to wear with leggings.  This camel color looks great over my Loft navy ponte leggings (I’m obsessed with these leggings btw) and brown boots.  But it would also look great over black leggings with black boots.   I accessorized the cowl neck with a long pendant – the Rebel from Stella & Dot.

This is a stylish yet comfy outfit and I might be wearing this on Thanksgiving!
